                                                      CAUSA RELLENA


                                  -IS THE TIPICAL PLATE WITH PERÚ-
                             
  
          INGREDIENTS 

                    1 kg wite potato 
                    1Kg  with  yellow potato
                     1/2  Onion unit 
                     1/4   Oil cup 
                     1 tablespoon yellow Chili 
                     3/4 Cup of lemon juice 
                     1 pinch of salt and pepper 
                       1 unit of lettuce 
                       6 botija olives 
                       2 unit por eggs 

CAUSA RELLENA PREPARATION:

   1 .Chill the potatoes;  peel them.  Place the potatoes in a potato ricer press or mash them to a uniform consistency.  In a large bowl, mix together the cooked mashed potatoes, lime juice, salt, pepper, and chilies.  In a medium bowl, mix together the chicken, peas, carrots, onion, and mayonnaise.

 2 . Divide the previously prepared potato in two.  Place half of the potato mixture on a large serving platter or platter;  make a rectangle about 7 by 11 inches.  Pour the chicken mixture over the potato dressing on the tray;  sprinkle with 1/4 teaspoon of salt and 1/8 teaspoon of pepper.  Top with remaining prepared potato in a rectangular shape.

3. Refrigerate for about 1 hour until you are ready to serve.  Decorate the potato dressing with parsley, chopped eggs, and olives.  Arrange the lettuce leaves around the potato dressing.  Cut into squares.
